Roasted Delicata Squash with Cumin


2 Delicata Squash
1/2 to 1 tsp ground cumin
1 to 2 tablespoons extra virgin olive oil or coconut oil
Sea salt to taste
Lots of fresh cracked black pepper

Directions

Preheat oven to 400F. Halve both squash lengthwise and scoop out seeds. Slice the halves crosswise into 1/2" pieces and put into a large bowl. Add the oil, cumin, salt and pepper then mix well with your hands to thoroughly coat each piece with the oil and seasonings. Place squash slices in a single layer on a cookie sheet and place on the middle rack in the oven. Bake for 30 minutes or until the squash is tender and starting to brown.

Serves 4 as a side dish.
