Sundried Tomato Pate'



Ingredients
1 ¼ C. almonds
¾ C sundried tomatoes**
2/3 C. sundried tomato soak water
½ C basil, tightly packed
2 TBL. lemon juice, fresh squeezed
2 tsp tamari / soy sauce
1 tsp garlic, minced
¼ tsp sea salt or to taste
¼ tsp black pepper, ground to taste
1 ½ TBL flax oil


Directions
* Soak almonds for 8 hours
* Soak tomatoes in warm filtered water for 20 minutes. Drain and set aside 2/3 C of soak water
* Place drained almonds in a food processor and process until mostly smooth
* Add remaining ingredients and process until smooth

Serve with whole-grain crackers, baby carrots, or whatever you like. Enjoy!

** If you only have sundried tomatoes that were stored in oil don't soak them. Instead just rinsed them and add a bit of water and a bit of the oil to the food processor instead of the 2/3 cup soak water.
