Spinach Risotto


Ingredients

1 tbsp olive oil

1/2 stick unsalted butter or equivalent substitute

2 onions, finely chopped

1-1/4 cups Arborio rice

1 small glass white wine

3-3/4 cups vegetable stock

4 good handfuls fresh spinach, washed and coursely chopped

1 cup Parmesan cheese, grated


Directions

1. Heat the oil and butter in a pan, and lightly fry the onions until golden.

2. Add the rice, stirring for one minute, then add the wine and heat until absorbed.

3. Add enough stock to cover, stir, and leave to absorb. Repeat process until all of the stock is used and the rice is cooked.

4. Stir in the spinach and cook until slightly wilted.

5. Remove from heat and sprinkle with the cheese.

Serves 4
